Raw Thousand Island Dressing:

Ingredients:
2 tablespoon apple cider vinegar
½ cup cashews ( soaked for 2-3 hours)
½ cup spring or filtered water water
¼ cup olive, walnut, or other raw nut oil
½ cup red onions, chopped
½ cup dill pickle, chopped
pinch of salt, onion powder, garlic powder (or fresh finely chopped garlic)
½ cup sundried tomatoes soaked

OPTIONAL but suggested: Add

Dash of coconut amino acids to taste

pinch of Pink Sea Salt
pinch cayenne pepper

Preparation:
Blend everything together except for the onions and pickle- to add once mixed.

Water down a little if you like it thinner. (With water)

Serve on fresh spring mix, with cucumbers, tomatoes, green onion, etc. Top with some sunflower seeds, black olives- etc.

I prefer it a little on the thicker side just as I remembered it as a kid. I think this one is a keeper and I hope you enjoy it as much as my friend and family have.
