“These are perfect for when you’re on the go – I’d suggest keeping some in the fridge for whenever you need a quick and healthy snack. Most fruit leathers available out there are full of processed sugars and preservatives, but if you make your own you can feel good knowing exactly what you’re eating!” As many of you may know from following me through social media, I have spent the last 2 1/2 months living on a small Caribbean island called Culebra.Making simple raw treats like these fruit roll ups were a life saver for me during my stay. Organic health food options were very limited and resources for organic snacks extremely limited so I made everything myself. The key was making wholesome snacks with limited and simple ingredients. In a future blog post I will disclose plans for a future retreat I will be hosting on my special island oasis off the coast of St Thomas USVI and Puerto Rico……more to come but for now enjoy!

Ingredients (makes 8 fruit leather rolls)

1 banana

2 cups fresh or frozen raspberries

Directions

In your food processor, puree the raspberries and banana into a thick fruity paste, adding water as needed. If you don’t like the seeds, just use a sieve to strain the puree before adding the banana.

Next, grease your dehydrator sheet with a thin layer of coconut oil and cover with fruit mixture, using a spatula to make sure it’s spread evenly. Dehydrate on 118 degrees for 8 to 12 hours, or overnight – fruit leather should be pliable, but not sticky. Cut into eight equal strips, and roll into cylinder shapes.

Adding lemon to water not only quenches thirst better than any other beverage, but it also nourishes our body with vitamins, minerals and trace elements which we absolutely need. Lemon with water can be considered the best natural energy booster. When we wake up in the morning, our bodily tissues are dehydrated and are in need of water to push out toxins and rejuvenate the cells.
